Description

A creamy and healthy dip made with roasted butternut squash and feta cheese.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 400°F.
  2. Toss butternut squash cubes with olive oil, garlic powder, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes or until soft.
  4. Let cool slightly, then blend with feta cheese until smooth.
  5. Serve chilled or at room temperature.
