Ingredients
- 9 lasagna noodles
- 1 cup sun-dried tomatoes (chopped)
- 1 lb lean ground turkey
- 1 onion (diced)
- 3 cloves garlic (minced)
- 1 cup low-fat ricotta cheese
- 1 cup low-fat mozzarella cheese (shredded)
- 2 cups spinach (chopped)
- 1 egg
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions. Drain and set aside.
- In a pan, brown ground turkey with onion and garlic. Add salt, pepper, oregano, and basil.
- In a bowl, mix ricotta cheese, egg, and spinach.
- Layer noodles, turkey mixture, ricotta mixture, and sun-dried tomatoes in a baking dish.
- Top with mozzarella cheese.
- Bake for 25 minutes or until cheese is bubbly and golden.
- Let cool for 5 minutes before serving.
Notes
- You can substitute ground turkey with ground chicken or tofu for a vegetarian option.
- For extra flavor, add a pinch of red pepper flakes to the turkey mixture.
- Store leftovers in an airtight container for up to 3 days.
