Ingredients

  • 9 lasagna noodles
  • 1 cup sun-dried tomatoes (chopped)
  • 1 lb lean ground turkey
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup low-fat ricotta cheese
  • 1 cup low-fat mozzarella cheese (shredded)
  • 2 cups spinach (chopped)
  • 1 egg
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions. Drain and set aside.
  3. In a pan, brown ground turkey with onion and garlic. Add salt, pepper, oregano, and basil.
  4. In a bowl, mix ricotta cheese, egg, and spinach.
  5. Layer noodles, turkey mixture, ricotta mixture, and sun-dried tomatoes in a baking dish.
  6. Top with mozzarella cheese.
  7. Bake for 25 minutes or until cheese is bubbly and golden.
  8. Let cool for 5 minutes before serving.

  • You can substitute ground turkey with ground chicken or tofu for a vegetarian option.
