Description
A healthy and moist zucchini oat bread packed with nutrients and fiber.
Ingredients
- 1 1/2 cups grated zucchini
- 1 cup rolled oats
- 1 cup whole wheat flour
- 2 eggs
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F and grease a loaf pan.
- In a bowl, mix grated zucchini, eggs, honey, applesauce, and vanilla.
- Add oats, flour, baking soda, cinnamon, and salt. Stir until combined.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Squeeze excess moisture from zucchini before adding it to the batter.
- Store in an airtight container for up to 3 days.
- Freeze slices for longer storage.
