Description

Ingredients

  • 1 1/2 cups grated zucchini
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F and grease a loaf pan.
  2. In a bowl, mix grated zucchini, eggs, honey, applesauce, and vanilla.
  3. Add oats, flour, baking soda, cinnamon, and salt. Stir until combined.
  4. Pour the batter into the loaf pan and smooth the top.
