Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups cooked brown rice
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1 cup low-fat Greek yogurt
- 1/2 cup shredded low-fat cheese
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until soft.
- Add bell peppers and cook for 3-4 minutes.
- Add shrimp and cook until pink, about 5 minutes.
- In a bowl, mix the cooked rice, shrimp mixture, yogurt, paprika, oregano, salt, and pepper.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
