A rich and flavorful lasagna with creamy spinach and mushrooms, perfect for a comforting meal.
Ingredients
- 12 lasagna noodles
- 2 cups fresh spinach
- 1.5 cups sliced mushrooms
- 1 onion, diced
- 3 garlic cloves, minced
- 2 cups ricotta cheese
- 1.5 cups shredded mozzarella
- 1/2 cup grated Parmesan
- 2 cups marinara sauce
- 1/2 cup heavy cream
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain.
- Heat olive oil in a pan, sauté onions and garlic until soft.
- Add mushrooms and cook until tender, then stir in spinach until wilted.
- In a bowl, mix ricotta, heavy cream, salt, pepper, and basil.
- Spread a thin layer of marinara sauce in a baking dish.
- Layer noodles, ricotta mixture, spinach-mushroom mix, and mozzarella.
- Repeat layers, ending with sauce and Parmesan on top.
- Cover with foil and bake for 25 minutes, then remove foil and bake for 10 more minutes.
- Let rest for 5 minutes before serving.
Notes
- You can substitute cottage cheese for ricotta.
- For extra flavor, add a pinch of red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
