Description
A simple and delicious one-pot meal featuring tender chicken and potatoes cooked in a creamy ranch sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp butter
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
Instructions
- Place chicken breasts in the crockpot.
- Add potatoes around the chicken.
- In a bowl, mix ranch seasoning, chicken broth, heavy cream, garlic powder, pepper, and salt.
- Pour the mixture over the chicken and potatoes.
- Dot with butter.
- Cover and cook on low for 6 hours or high for 3 hours.
- Shred chicken slightly before serving.
Notes
- For thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes of cooking.
- Add frozen peas or carrots for extra veggies.
- Store leftovers in an airtight container for up to 3 days.
