Description

A hearty and healthy beef pot pie made in a crock pot for easy preparation.


Ingredients

  • 1 lb lean beef stew meat
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional, for thickening)


Instructions

  1. Place beef, potatoes, carrots, peas, onion, and garlic in the crock pot.
  2. Pour beef broth over the ingredients.
  3. Add thyme, rosemary, and black pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. If needed, mix cornstarch with a little water and stir into the pot to thicken the sauce.
  6. Serve hot.

Notes
