Description
A flavorful and healthy crockpot lemongrass curry that’s easy to prepare and packed with aromatic spices.
Ingredients
- 2 stalks lemongrass, finely chopped
- 1 can (14 oz) coconut milk
- 1 lb chicken breast, cubed
- 1 red bell pepper, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions
- Combine lemongrass, coconut milk, chicken, bell pepper, onion, garlic, ginger, curry powder, turmeric, cumin, coriander, fish sauce, and lime juice in the crockpot.
- Cook on low for 6 hours or high for 3 hours.
- Stir in spinach and cook for an additional 10 minutes.
- Season with salt and pepper.
- Serve hot over rice or quinoa.

- Use light coconut milk for a lower-calorie option.
- Substitute tofu for chicken to make it vegetarian.
