Ingredients

  • 2 stalks lemongrass, finely chopped
  • 1 can (14 oz) coconut milk
  • 1 lb chicken breast, cubed
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 cup fresh spinach
  • Salt and pepper to taste


Instructions

  1. Combine lemongrass, coconut milk, chicken, bell pepper, onion, garlic, ginger, curry powder, turmeric, cumin, coriander, fish sauce, and lime juice in the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Stir in spinach and cook for an additional 10 minutes.
  4. Season with salt and pepper.
  5. Serve hot over rice or quinoa.
