Description

Ingredients

  • 2 cups chopped carrots
  • 2 cups chopped bell peppers (mixed colors)
  • 1 cup chopped zucchini
  • 1 cup chopped red cabbage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook for 3 minutes.
  3. Add all chopped vegetables, stir well.
  4. Pour in vegetable broth and add seasonings.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Serve hot.
