A vibrant and nutritious soup packed with colorful vegetables.
Ingredients
- 2 cups chopped carrots
- 2 cups chopped bell peppers (mixed colors)
- 1 cup chopped zucchini
- 1 cup chopped red cabbage
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cook for 3 minutes.
- Add all chopped vegetables, stir well.
- Pour in vegetable broth and add seasonings.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- You can add cooked beans or lentils for extra protein.
