Description

A flavorful and healthy roasted pepper dip inspired by Spanish cuisine. Perfect for parties or snacks.


Ingredients

  • 2 large red bell peppers
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut peppers in half, remove seeds, and place on baking sheet.
  3. Drizzle with olive oil and roast for 25 minutes until skin blisters.
  4. Let cool, then peel off skins.
  5. Blend peppers with garlic, paprika, salt, yogurt, and lemon juice until smooth.
  6. Chill for 1 hour before serving.

Notes

  • Store in airtight container for up to 3 days.
  • Serve with vegetables or whole-grain crackers.
  • For spicier version, add pinch of cayenne pepper.
