Description
A flavorful and healthy roasted pepper dip inspired by Spanish cuisine. Perfect for parties or snacks.
Ingredients
- 2 large red bell peppers
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 cup Greek yogurt
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Cut peppers in half, remove seeds, and place on baking sheet.
- Drizzle with olive oil and roast for 25 minutes until skin blisters.
- Let cool, then peel off skins.
- Blend peppers with garlic, paprika, salt, yogurt, and lemon juice until smooth.
- Chill for 1 hour before serving.
Notes
- Store in airtight container for up to 3 days.
- Serve with vegetables or whole-grain crackers.
- For spicier version, add pinch of cayenne pepper.
