Description

A hearty and healthy vegan casserole made with wild rice and navy beans, perfect for a nutritious meal.


Ingredients

  • 1 cup wild rice
  • 1 can navy beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, diced
  • 1 cup vegetable broth
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, and carrot. Sauté for 5 minutes.
  3. Add wild rice, navy beans, vegetable broth, thyme, smoked paprika, salt, and pepper. Stir well.
  4. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  5. Transfer the mixture to a casserole dish and bake for 30 minutes.
  6. Remove from the oven and let it cool slightly before serving.

Notes

  • You can substitute navy beans with any white beans.
  • For extra flavor, add a splash of lemon juice before serving.
