Description

Simple and flavorful roasted carrots served with creamy whipped ricotta and drizzled with spicy hot honey for a perfect balance of sweet and heat.


Ingredients

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup ricotta cheese
  • 1 tbsp honey
  • 1/4 tsp red pepper flakes
  • 1 tsp lemon zest


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes until tender and slightly caramelized.
  4. While carrots roast, whip ricotta in a bowl until smooth.
  5. Mix honey with red pepper flakes for the hot honey.
  6. Spread whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
  7. Garnish with lemon zest before serving.
