Ingredients
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup ricotta cheese
- 1 tbsp honey
- 1/4 tsp red pepper flakes
- 1 tsp lemon zest
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 25-30 minutes until tender and slightly caramelized.
- While carrots roast, whip ricotta in a bowl until smooth.
- Mix honey with red pepper flakes for the hot honey.
- Spread whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.
- Garnish with lemon zest before serving.
