Description
A homemade version of the Taco Bell Enchirito, combining the flavors of a burrito and an enchilada in one delicious dish.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 6 small flour tortillas
- 1 can refried beans
- 1 cup shredded cheddar cheese
- 1 can enchilada sauce
- 1/2 cup diced onions
- 1/4 cup sliced black olives
Instructions
- Cook ground beef in a skillet over medium heat until browned.
- Drain excess fat, then add taco seasoning and water. Stir and simmer for 5 minutes.
- Warm refried beans in a separate pan.
- Spread a thin layer of beans on each tortilla.
- Add a spoonful of seasoned beef and a sprinkle of cheese.
- Roll tortillas tightly and place seam-side down in a baking dish.
- Pour enchilada sauce over the top, then sprinkle with cheese, onions, and olives.
- Bake at 350°F for 15-20 minutes until cheese melts.
Notes
- Use corn tortillas for a gluten-free option.
- Add jalapeños for extra heat.
- Store leftovers in an airtight container for up to 2 days.
