A simple and delicious house pasta salad perfect for any occasion. This dish is easy to prepare and packed with flavor.
Ingredients
- 8 oz pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, and black olives.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Sprinkle with feta cheese before serving.
Notes
- You can add grilled chicken or shrimp for extra protein.
- Store leftovers in an airtight container in the fridge for up to 3 days.
