Description

A simple and flavorful Italian pasta dish with tuna and eggplant.


Ingredients

  • 250g pasta
  • 150g canned tuna, drained
  • 1 medium eggplant, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
  3. Add diced eggplant and cook until softened, about 5-7 minutes.
  4. Stir in tuna, oregano, salt, and pepper. Cook for another 2-3 minutes.
  5. Toss the cooked pasta into the pan and mix well.
  6. Garnish with fresh basil before serving.

Notes

  • You can use fresh tuna if preferred.
