Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/2 cup fresh lemon juice
- 1/4 cup all-purpose flour
- 1 tablespoon lemon zest
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a bowl, mix 1 cup butter, 1/2 cup sugar, 2 cups flour, and salt until crumbly. Press half of this mixture into the prepared pan.
- Bake the crust for 15-20 minutes until lightly golden.
- While the crust bakes, whisk eggs, 1 1/2 cups sugar, lemon juice, 1/4 cup flour, and lemon zest until smooth.
- Pour the lemon mixture over the baked crust. Crumble the remaining crust mixture on top.
- Bake for another 20-25 minutes until the topping is golden and the filling is set.
- Let it cool completely before cutting into bars. Dust with powdered sugar if desired.
