Description
A hearty and comforting casserole combining meatloaf and loaded baked potatoes for a satisfying meal.
Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup ketchup
- 1 tsp Worcestershire sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 4 large potatoes, peeled and diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tbsp butter
- 2 green onions, sliced
- 4 strips cooked bacon, crumbled
Instructions
- Preheat oven to 375°F (190°C).
- Mix ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper in a bowl.
- Press the meatloaf mixture into the bottom of a greased 9×13-inch baking dish.
- Boil diced potatoes until tender, then drain and mash with butter, sour cream, and half the shredded cheese.
- Spread mashed potatoes evenly over the meatloaf layer.
- Sprinkle remaining cheese, bacon, and green onions on top.
- Bake for 25-30 minutes until cheese is melted and meatloaf is cooked through.
- Let cool for 5 minutes before serving.
Notes
- Use lean ground beef to reduce fat content.
- Substitute turkey or plant-based meat for a lighter version.
- Leftovers can be refrigerated for up to 3 days.
