A hearty low carb chicken casserole packed with flavor and perfect for a healthy meal.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cauliflower, chopped
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté cauliflower for 5 minutes.
- Add shredded chicken, garlic powder, onion powder, salt, and black pepper. Stir well.
- Pour in heavy cream and mix until combined.
- Transfer the mixture to a baking dish and top with cheddar and Parmesan cheese.
- Bake for 20 minutes or until the cheese is golden and bubbly.
- Let cool for 5 minutes before serving.
Notes
- Use rotisserie chicken for quick prep.
- Add broccoli or spinach for extra veggies.
- Store leftovers in an airtight container for up to 3 days.
