A hearty and flavorful soup made with ground beef, perfect for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 2 celery stalks, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup small pasta (like ditalini)
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned. Drain excess fat.
- Add onion, garlic, carrot, and celery. Cook until vegetables soften.
- Stir in diced tomatoes, beef broth, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add pasta and cook until tender (about 10 minutes).
- Serve hot.
Notes
- Use lean ground beef to reduce fat content.
- You can substitute pasta with rice or quinoa.
- Store leftovers in the fridge for up to 3 days.
