Ingredients
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup small pasta (like ditalini)
- 2 cups fresh spinach
- Grated Parmesan for serving
Instructions
- Brown the sausage in a large pot over medium heat, breaking it into small pieces.
- Add onion, garlic, carrots, and celery. Cook until vegetables soften (about 5 minutes).
- Pour in chicken broth and diced tomatoes. Stir in basil and oregano.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add pasta and cook until al dente (about 8-10 minutes).
- Stir in spinach and cook until wilted (about 2 minutes).
- Season with salt and pepper. Serve with grated Parmesan.
