Delicious and healthy Mediterranean-inspired snack muffins packed with flavor and nutrients.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1/2 cup Greek yogurt
- 1 egg
- 1/4 cup milk
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a large bowl, mix flour, oats, baking powder, baking soda, and salt.
- Add feta cheese, sun-dried tomatoes, olives, and parsley. Stir to combine.
- In another bowl, whisk olive oil, yogurt, egg, and milk.
- Pour wet ingredients into dry ingredients. Mix until just combined.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- Freeze for longer storage. Reheat before serving.
- Substitute feta with goat cheese if preferred.
