Ingredients

  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 8 oz pasta (penne or rotini)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. Heat a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
  2. Add onion, garlic, and bell pepper. Cook until softened, about 3 minutes.
  3. Stir in chicken broth, diced tomatoes, pasta, Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, or until pasta is tender.
  5. Remove from heat. Stir in shredded cheese if desired.
