A quick and easy one-pot meal with smoked sausage and pasta, perfect for busy weeknights.
Ingredients
- 1 lb smoked sausage, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 8 oz pasta (penne or rotini)
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheese (optional)
- Fresh parsley for garnish
Instructions
- Heat a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes.
- Add onion, garlic, and bell pepper. Cook until softened, about 3 minutes.
- Stir in chicken broth, diced tomatoes, pasta, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, or until pasta is tender.
- Remove from heat. Stir in shredded cheese if desired.
- Garnish with fresh parsley and serve hot.
Notes
- Use any type of smoked sausage you prefer.
- Add a pinch of red pepper flakes for a spicy kick.
- Leftovers can be stored in the fridge for up to 3 days.
