Description
A hearty and flavorful dish made with red beans and rice cooked slowly in a crockpot for maximum flavor.
Ingredients
- 1 pound dried red beans
- 1 cup long-grain white rice
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 pound smoked sausage, sliced
- 6 cups water or chicken broth
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Rinse the red beans and soak them overnight. Drain before using.
- Add all ingredients except rice to the crockpot.
- Cook on low for 6-8 hours or until beans are tender.
- Stir in rice and cook for an additional 30 minutes.
- Remove bay leaves before serving.
Notes
- Soaking beans overnight reduces cooking time.
- Adjust seasoning to your taste.
- Store leftovers in an airtight container for up to 3 days.
