Ingredients
- 1 cup dill pickles, finely chopped
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1 cup roasted peanuts
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Line a baking sheet with parchment paper.
- In a saucepan, combine sugar, corn syrup, and water. Heat over medium heat, stirring until sugar dissolves.
- Bring to a boil and cook without stirring until the mixture reaches 300°F (hard crack stage).
- Remove from heat and quickly stir in baking soda, vanilla, and salt.
- Fold in chopped pickles and peanuts.
- Pour onto the prepared baking sheet and spread evenly.
- Let cool completely, then break into clusters.
