A hearty and comforting casserole that combines the flavors of traditional pierogi in an easy-to-make dish.
Ingredients
- 1 lb potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup butter, melted
- 1/2 cup onion, finely chopped
- 1/2 lb bacon, cooked and crumbled
- 1 package (12 oz) egg noodles, cooked
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the diced potatoes until tender, then mash them with sour cream, half of the butter, salt, and pepper.
- In a skillet, sauté the onions until translucent.
- Mix the cooked noodles, mashed potatoes, onions, bacon, and shredded cheese in a large bowl.
- Transfer the mixture to a greased baking dish and drizzle the remaining melted butter on top.
- Bake for 25-30 minutes or until golden and bubbly.
Notes
- For a vegetarian version, skip the bacon.
- Let the casserole rest for 5 minutes before serving.
- Store leftovers in an airtight container for up to 3 days.
