Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk (dairy or plant-based)
- 1/4 cup pumpkin puree
- 1 tbsp maple syrup
- 1/2 tsp pumpkin pie spice
- 1/4 tsp vanilla extract
- 1 tbsp chia seeds
- 1 tbsp chopped pecans (optional)
Instructions
- In a jar or bowl, mix oats, milk, pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract.
- Stir in chia seeds.
- Cover and refrigerate overnight (or at least 4 hours).
- Before serving, top with chopped pecans if desired.
Notes
- Store in the fridge for up to 3 days.
- Adjust sweetness with more or less maple syrup.
