Ingredients
- 1 cup pumpkin puree
- 2 eggs
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 1/2 cups oat flour
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F and grease a donut pan.
- In a bowl, mix pumpkin puree, eggs, maple syrup, and vanilla extract.
- Add oat flour, protein powder, baking powder, pumpkin pie spice, and salt. Stir until combined.
- Spoon the batter into the donut pan, filling each cavity about 3/4 full.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Let cool before removing from the pan.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, drizzle with a glaze made from powdered sugar and milk.
- Substitute almond flour for oat flour if desired.
