Ingredients

  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 cups oat flour
  • 1 scoop vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt


Instructions

  1. Preheat your oven to 350°F and grease a donut pan.
  2. In a bowl, mix pumpkin puree, eggs, maple syrup, and vanilla extract.
  3. Add oat flour, protein powder, baking powder, pumpkin pie spice, and salt. Stir until combined.
  4. Spoon the batter into the donut pan, filling each cavity about 3/4 full.
  5. Bake for 12-15 minutes or until a toothpick comes out clean.
  6. Let cool before removing from the pan.
