Description
A quick and easy pasta salad inspired by the flavors of a classic club sandwich.
Ingredients
- 2 cups cooked pasta
- 1 cup diced cooked chicken
- 1/2 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup mayonnaise
- 1 tbsp mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 slices cooked bacon, crumbled
- 1/4 cup shredded lettuce
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine pasta, chicken, tomatoes, cucumber, and red onion.
- In a small bowl, mix mayonnaise, mustard, salt, and pepper.
- Pour dressing over pasta mixture and toss to coat.
- Top with crumbled bacon and shredded lettuce before serving.
Notes
- Use rotini or penne pasta for best results.
- Adjust mayonnaise amount for desired creaminess.
- Add avocado for extra richness.
