A simple and flavorful crockpot meal with Thai-inspired peanut sauce.
Ingredients
- 1 lb chicken breast, diced
- 1 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp lime juice
- 2 tbsp honey
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/4 cup chopped peanuts
- 2 cups cooked rice
Instructions
- Place chicken in the crockpot.
- Mix peanut butter, soy sauce, lime juice, honey, ginger, and garlic in a bowl.
- Pour sauce over chicken and stir.
- Cook on low for 4 hours.
- Add bell pepper and broccoli in the last 30 minutes.
- Serve over rice and top with chopped peanuts.

- Adjust honey for sweetness preference.
