Description

Ingredients

  • 4 large potatoes, thinly sliced
  • 1 cup low-fat cheddar cheese, shredded
  • 1 cup low-fat milk
  • 2 tbsp whole wheat flour
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 tsp dried thyme


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  3. Stir in flour, salt, pepper, paprika, and thyme. Cook for 1 minute.
  4. Gradually whisk in milk until smooth. Simmer until slightly thickened.
  5. Layer half the potatoes in a greased baking dish. Pour half the sauce over them.
  6. Sprinkle half the cheese on top.
  7. Repeat with remaining potatoes, sauce, and cheese.
  8. Cover and bake for 45 minutes.
  9. Uncover and bake another 15 minutes until golden.
  10. Let stand 5 minutes before serving.
