A healthier twist on classic scalloped potatoes, featuring a cheesy, creamy sauce with fewer calories.
Ingredients
- 4 large potatoes, thinly sliced
- 1 cup low-fat cheddar cheese, shredded
- 1 cup low-fat milk
- 2 tbsp whole wheat flour
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- In a saucepan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Stir in flour, salt, pepper, paprika, and thyme. Cook for 1 minute.
- Gradually whisk in milk until smooth. Simmer until slightly thickened.
- Layer half the potatoes in a greased baking dish. Pour half the sauce over them.
- Sprinkle half the cheese on top.
- Repeat with remaining potatoes, sauce, and cheese.
- Cover and bake for 45 minutes.
- Uncover and bake another 15 minutes until golden.
- Let stand 5 minutes before serving.
Notes
- Use a mandoline for even potato slices.
- Swap cheddar for mozzarella for a milder flavor.
- Add spinach or kale for extra nutrients.
- Store leftovers in the fridge for up to 3 days.
