Description
A simple and healthy crockpot chicken taco soup packed with flavor and nutrients.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 packet taco seasoning
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add black beans, corn, diced tomatoes, onion, bell pepper, and garlic.
- Pour in chicken broth.
- Sprinkle taco seasoning, cumin, chili powder, salt, and pepper over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks before serving.
Notes
- Top with avocado, shredded cheese, or sour cream if desired.
- Store leftovers in an airtight container for up to 3 days.
- Freeze for up to 3 months.
