Description
A healthy version of orange chicken made in a crockpot. This dish is flavorful, easy to prepare, and perfect for a busy weeknight.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cubed
- 1/2 cup orange juice (freshly squeezed preferred)
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp orange zest
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp cornstarch
- 2 tbsp water
- 2 cups broccoli florets (optional)
- 1 tbsp sesame seeds (for garnish)
- 2 green onions, sliced (for garnish)
Instructions
- Place chicken cubes in the crockpot.
- In a bowl, whisk together orange juice, soy sauce, honey, garlic, ginger, orange zest, and red pepper flakes.
- Pour the sauce over the chicken and stir to coat.
- Cover and cook on LOW for 4 hours or HIGH for 2 hours.
- In a small bowl, mix cornstarch and water to create a slurry.
- Stir the slurry into the crockpot and add broccoli if using. Cook for another 15-20 minutes until sauce thickens.
- Garnish with sesame seeds and green onions before serving.
Notes
- For extra crispiness, broil the cooked chicken for 2-3 minutes before serving.
- Adjust honey to taste if you prefer sweeter or less sweet.
- Serve over brown rice or cauliflower rice for a healthier option.
