Description

A healthy version of orange chicken made in a crockpot. This dish is flavorful, easy to prepare, and perfect for a busy weeknight.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cubed
  • 1/2 cup orange juice (freshly squeezed preferred)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp orange zest
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 cups broccoli florets (optional)
  • 1 tbsp sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Place chicken cubes in the crockpot.
  2. In a bowl, whisk together orange juice, soy sauce, honey, garlic, ginger, orange zest, and red pepper flakes.
  3. Pour the sauce over the chicken and stir to coat.
  4. Cover and cook on LOW for 4 hours or HIGH for 2 hours.
  5. In a small bowl, mix cornstarch and water to create a slurry.
  6. Stir the slurry into the crockpot and add broccoli if using. Cook for another 15-20 minutes until sauce thickens.
  7. Garnish with sesame seeds and green onions before serving.

Notes

  • Adjust honey to taste if you prefer sweeter or less sweet.
