Description
A quick and healthy Italian-inspired soup with spinach and pasta.
Ingredients
- 2 cups fresh spinach
- 1 cup pasta
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Pour in vegetable broth and bring to a boil.
- Add pasta and cook until al dente.
- Stir in spinach and oregano.
- Season with salt and pepper.
- Serve hot.
Notes
- Use whole wheat pasta for extra fiber.
- Add grated Parmesan for extra flavor.
- Adjust broth quantity for thicker or thinner soup.
