Ingredients

  • 1 lb fresh green beans, trimmed and halved
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1/2 cup low-sodium vegetable broth
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp black pepper
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam green beans for 5 minutes, then drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
  4. Add mushrooms and cook until tender, about 5 minutes.
  5. Stir in vegetable broth, thyme, rosemary, salt, and pepper. Simmer for 2 minutes.
  6. Combine green beans and mushroom mixture in a baking dish.
  7. Sprinkle breadcrumbs and Parmesan cheese on top.
  8. Bake for 20 minutes or until golden brown.
