Ingredients
- 1 lb lean ground turkey
- 1 cup quinoa, cooked
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1 tsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup shredded low-fat cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add ground turkey and cook until browned.
- Add red onion, bell pepper, garlic powder, smoked paprika, salt, and black pepper. Cook for 3-4 minutes.
- Stir in cooked quinoa, black beans, corn, and diced tomatoes. Mix well.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- You can substitute ground turkey with lean ground beef or chicken.
- Add avocado slices for extra creaminess.
- Store leftovers in an airtight container for up to 3 days.
