A creamy and hearty potato soup loaded with toppings for a comforting meal.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion and garlic until softened.
- Add diced potatoes and broth, then bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Use a masher or blender to partially blend the soup for a creamy texture.
- Stir in heavy cream and half the cheddar cheese until melted.
- Season with salt and pepper.
- Serve hot, topped with remaining cheese, crumbled bacon, and green onions.
Notes
- For a thicker soup, blend more potatoes.
- Substitute milk for cream for a lighter version.
