A hearty and easy-to-make casserole combining tacos, hashbrowns, and slow-cooked flavors.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (20 oz) frozen hashbrowns
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Brown the ground beef in a skillet and drain excess fat.
- Stir in taco seasoning and diced tomatoes with green chilies.
- Layer half the hashbrowns in the crock pot.
- Spread the beef mixture over the hashbrowns.
- Top with remaining hashbrowns and cheese.
- Cover and cook on low for 4 hours.
- Garnish with sour cream and green onions before serving.

- Use lean ground beef to reduce fat.
- Add jalapeños for extra spice.
