Description

A quick and easy appetizer combining Rotel dip and eggroll wrappers for a crispy, cheesy bite.


Ingredients

  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 1 package (8 oz) cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 12 eggroll wrappers
  • 1 tbsp water
  • 1 cup vegetable oil for frying


Instructions

  1. Mix Rotel, cream cheese, and cheddar cheese in a bowl.
  2. Place 2 tbsp of filling in the center of each eggroll wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides. Roll tightly.
  4. Seal the edge with water.
  5. Heat oil to 350°F in a deep skillet.
  6. Fry eggrolls for 2-3 minutes per side until golden brown.
  7. Drain on paper towels.

Notes

  • Serve with ranch or sour cream for dipping.
  • For a spicier version, use hot Rotel.
  • Bake at 400°F for 15 minutes if you prefer not to fry.
