Ingredients
- 2 cups mixed vegetables (carrots, bell peppers, zucchini)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, salt, pepper, and garlic powder.
- Spread vegetables on a baking sheet and roast for 25 minutes.
- Let vegetables cool, then blend with Greek yogurt and lemon juice.
- Garnish with fresh parsley before serving.
