Ingredients

  • 1.5 lbs chicken breast, sliced into strips
  • 2 bell peppers, sliced (any color)
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime, juiced
  • Fresh cilantro (optional)
  • 8 small tortillas


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, mix chicken, bell peppers, and onions.
  3. Add olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper. Toss to coat.
  4. Spread evenly on a sheet pan.
  5. Bake for 20-25 minutes until chicken is cooked through.
