Description
A hearty and comforting soup inspired by the classic shepherd’s pie. Packed with ground meat, vegetables, and topped with creamy mashed potatoes.
Ingredients
- 1 lb ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup frozen peas
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Brown the ground meat in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Pour in beef broth and bring to a simmer.
- Stir in peas, Worcestershire sauce, thyme, salt, and pepper.
- Simmer for 15-20 minutes.
- Top with mashed potatoes and cheese.
- Serve hot.
