Description
A fresh and flavorful Southwest Quinoa Salad packed with protein and veggies.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can black beans, rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in 2 cups water for 15 minutes. Let it cool.
- In a large bowl, mix black beans, corn, bell pepper, and avocado.
- Add cooled quinoa to the bowl.
- In a small bowl, whisk lime juice, olive oil, cumin, salt, and pepper.
- Pour dressing over salad and toss gently.
- Sprinkle chopped cilantro before serving.
Notes
- Use fresh or frozen corn.
- Add diced jalapeño for extra heat.
- Store leftovers in the fridge for up to 3 days.
