Description

A fresh and flavorful Southwest Quinoa Salad packed with protein and veggies.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Rinse quinoa under cold water.
  2. Cook quinoa in 2 cups water for 15 minutes. Let it cool.
  3. In a large bowl, mix black beans, corn, bell pepper, and avocado.
  4. Add cooled quinoa to the bowl.
  5. In a small bowl, whisk lime juice, olive oil, cumin, salt, and pepper.
  6. Pour dressing over salad and toss gently.
  7. Sprinkle chopped cilantro before serving.
