Ingredients
- 2 cups corn kernels (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup crumbled cotija cheese
- 1/4 cup chopped cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1 lime, juiced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, mix mayonnaise and sour cream until smooth.
- Add corn, cotija cheese, cilantro, chili powder, smoked paprika, lime juice, salt, and pepper. Stir well.
- Cover and refrigerate for at least 30 minutes to let flavors blend.
