A creamy and hearty chowder combining sweet corn and shrimp for a comforting meal.
Ingredients
- 2 cups fresh or frozen sweet corn
- 1 lb shrimp, peeled and deveined
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Melt butter in a large pot over medium heat.
- Add diced onion and minced garlic, sauté until soft.
- Stir in flour (if using) to thicken the chowder.
- Pour in broth and bring to a simmer.
- Add sweet corn and cook for 5 minutes.
- Stir in heavy cream, salt, pepper, and paprika.
- Add shrimp and cook until pink and opaque (about 3-4 minutes).
- Garnish with fresh parsley before serving.
Notes
- Use fresh corn in summer for the best flavor.
- For a lighter version, replace heavy cream with half-and-half.
- Adjust seasoning to taste.
