Description

A quick and easy casserole that combines the bold flavors of tacos with the crunch of Doritos. Perfect for a family dinner or potluck.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 bag (10 oz) Doritos (nacho cheese flavor)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions


Instructions

  1. Preheat oven to 375°F.
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5 minutes.
  4. Crush half the bag of Doritos and spread them in the bottom of a 9×13-inch baking dish.
  5. Layer the beef mixture over the Doritos.
  6. Sprinkle shredded cheeses evenly over the beef mixture.
  7. Crush the remaining Doritos and sprinkle over the top.
  8. Bake for 20 minutes or until cheese is melted and bubbly.
  9. Remove from oven and let cool for 5 minutes before serving.
  10. Top with sour cream and green onions.

Notes

  • You can substitute ground turkey for beef.
  • Use any Doritos flavor you prefer.
  • Add jalapeños for extra heat.
  • Leftovers can be refrigerated for up to 3 days.
