Description
A quick and easy casserole that combines the bold flavors of tacos with the crunch of Doritos. Perfect for a family dinner or potluck.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 bag (10 oz) Doritos (nacho cheese flavor)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat oven to 375°F.
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5 minutes.
- Crush half the bag of Doritos and spread them in the bottom of a 9×13-inch baking dish.
- Layer the beef mixture over the Doritos.
- Sprinkle shredded cheeses evenly over the beef mixture.
- Crush the remaining Doritos and sprinkle over the top.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Remove from oven and let cool for 5 minutes before serving.
- Top with sour cream and green onions.
Notes
- You can substitute ground turkey for beef.
- Use any Doritos flavor you prefer.
- Add jalapeños for extra heat.
- Leftovers can be refrigerated for up to 3 days.
