Description

A delicious and healthy twist on traditional tacos, using bell peppers as a low-carb vessel for a flavorful beef and rice filling.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  4. Add onion, garlic, and taco seasoning to the beef. Cook until onions soften.
  5. Stir in cooked rice, salsa, and half the cheese.
  6. Stuff the bell peppers with the beef mixture.
  7. Top with remaining cheese and bake for 25-30 minutes until peppers soften.
  8. Garnish with fresh cilantro before serving.
