Description

A delicious and colorful dish that combines sweet pineapple, savory teriyaki chicken, and fluffy rice all stuffed inside bell peppers. Perfect for a weeknight dinner or meal prep.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb boneless chicken breast, diced
  • 1 cup cooked white rice
  • 1 cup diced pineapple
  • 1/2 cup teriyaki sauce
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off bell peppers and remove seeds.
  3. Heat oil in pan over medium heat. Cook chicken until no longer pink.
  4. Add pineapple, rice, teriyaki sauce, garlic powder, and black pepper to the chicken. Mix well.
