A delicious and colorful dish that combines sweet pineapple, savory teriyaki chicken, and fluffy rice all stuffed inside bell peppers. Perfect for a weeknight dinner or meal prep.
Ingredients
- 4 large bell peppers (any color)
- 1 lb boneless chicken breast, diced
- 1 cup cooked white rice
- 1 cup diced pineapple
- 1/2 cup teriyaki sauce
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 cup shredded cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off bell peppers and remove seeds.
- Heat oil in pan over medium heat. Cook chicken until no longer pink.
- Add pineapple, rice, teriyaki sauce, garlic powder, and black pepper to the chicken. Mix well.
- Stuff peppers with chicken mixture. Top with cheese if using.
- Bake for 25-30 minutes until peppers are tender.
- Serve hot.

- Use fresh pineapple for best flavor
- Can substitute brown rice for white rice
