Description
A fresh and flavorful dish featuring cilantro-lime marinated chicken served with peach salsa.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1/4 cup chopped cilantro
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 peaches, diced
- 1/4 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- 2 cups cooked quinoa
- 1 avocado, sliced
Instructions
- In a bowl, mix olive oil, lime juice, cilantro, garlic powder, cumin, salt, and pepper.
- Coat chicken breasts with the marinade and refrigerate for 30 minutes.
- Grill or pan-sear chicken until fully cooked, about 6-7 minutes per side.
- In another bowl, combine peaches, red onion, jalapeño, lime juice, and cilantro for the salsa.
- Slice the cooked chicken.
- Serve chicken over quinoa, topped with peach salsa and avocado slices.
Notes
- Marinate chicken longer for deeper flavor.
- Adjust jalapeño for desired spice level.
- Use ripe peaches for best salsa taste.
