Description

A fresh and flavorful dish featuring cilantro-lime marinated chicken served with peach salsa.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 peaches, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 2 cups cooked quinoa
  • 1 avocado, sliced


Instructions

  1. In a bowl, mix olive oil, lime juice, cilantro, garlic powder, cumin, salt, and pepper.
  2. Coat chicken breasts with the marinade and refrigerate for 30 minutes.
  3. Grill or pan-sear chicken until fully cooked, about 6-7 minutes per side.
  4. In another bowl, combine peaches, red onion, jalapeño, lime juice, and cilantro for the salsa.
  5. Slice the cooked chicken.
  6. Serve chicken over quinoa, topped with peach salsa and avocado slices.
