A fresh and healthy pasta salad perfect for Thanksgiving, featuring creamy avocado and crisp vegetables.
Ingredients
- 8 oz whole wheat pasta
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, finely chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine avocado, cherry tomatoes, cucumber, and red onion.
- Add cooled pasta to the bowl.
- Drizzle with olive oil and lemon juice. Toss gently.
- Season with salt and pepper. Serve chilled.
