A hearty and nutritious split pea soup perfect for Thanksgiving. It’s budget-friendly, healthy, and easy to make.
Ingredients
- 2 cups dried split peas
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute.
- Add split peas, vegetable broth, bay leaf, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occasionally.
- Remove bay leaf and blend soup until smooth if desired.
- Serve hot.
Notes
- Soak split peas overnight for faster cooking.
- Add more broth if soup is too thick.
- Store leftovers in the fridge for up to 3 days.
